I have three talent agencies wanting to meet my son and I was wondering if it is professional to let them know that we have other agencies that are interested in meeting my son before we sign him with an agent.

Yes, there’s nothing wrong with telling an acting agent that you have other meetings lined up. It can actually be a good thing, as it shows that your child is gathering a lot of interest from the industry and has several options for representation.
What is not very professional is for agents to ask you who else you are meeting, although a few agencies may ask you just that. I think it is best to politely decline to answer that question with something like, “If you don’t mind, I would rather discuss my son’s prospects at your agency during this interview.”
